Swaen© Spelt Specialty Wheat Malt

Swaen© Spelt is crafted from the ancient heirloom grain Triticum spelta. It offers a more rustic and complex profile than standard wheat malts, characterised by a distinctive nuttiness—often likened to hazelnut—and a delicate, peppery spice. Due to its high protein content and unique starch structure, it significantly enhances mouthfeel and promotes excellent head stability. While it is lower in gluten than modern wheat, its high protein can contribute to a desirable permanent haze in traditional styles. It serves as a fantastic tool for brewers looking to add “old-world” depth and a silky, full-bodied texture to their recipes.

Storage and Handling

Store in a cool (< 20°C), dry, and pest-free environment. Spelt malt is particularly sensitive to moisture; ensure bags are kept airtight. For peak aromatic intensity and enzymatic performance, use within 18–24 months of the production date.
