Lalbrew – Servomyces Zinc Enriched Capsules
Originally developed for German brewers by the University of Munich and the Hefebank Weihenstephan, LalBrew® Servomyces is a natural, single-strain brewing yeast used as a biological vehicle for minerals. Unlike mineral salts (like zinc sulfate), Servomyces incorporates zinc into the living cellular matrix of the yeast during propagation. When added to the boil, the yeast is inactivated, but the zinc remains trapped in the cells; when the primary fermentation yeast later consumes these “packets,” the zinc is immediately available for protein synthesis and enzyme cofactor activity. This results in faster fermentation, improved flocculation, higher alcohol yields, and the elimination of harsh sulfur notes. It is especially effective for lagers, high-gravity brewing, and beers with high adjunct ratios.
