LalBrew Pomona™ is the result of advanced yeast breeding and adaptive laboratory evolution conducted by Escarpment Laboratories (Canada). This robust Saccharomyces cerevisiae strain was “trained” through over 50 generations in high-gravity, heavily hopped wort to ensure maximum stress tolerance and reliability in challenging IPA environments. It is a haze-positive strain that enhances the permanent turbidity required for New England-style ales. Technically unique, it offers superior terpene-led bio-transformation—efficiently converting hop geraniol into citrusy citronellol. Unlike some hazy strains that can be sluggish, Pomona offers vigorous kinetics and high attenuation, resulting in a drier finish that prevents juicy beers from tasting cloying while maintaining a silky mouthfeel.

Typical Usage

  • Pitch Rate: 50 – 100g per hL of wort (to achieve 2.5 – 5 million viable cells/mL).
  • Temperature Strategy: Maintain between 18°C and 22°C. Fermenting at the higher end of the range will accentuate the tropical and stone fruit esters.

  • Handling: Once opened, the yeast loses activity rapidly. Reseal and use within 3 days. Dry pitching is the preferred method—sprinkle the yeast evenly onto the surface of the wort during the knockout process.
