LalBrew Pomona™ Dry Yeast
LalBrew Pomona™ is the result of advanced yeast breeding and adaptive laboratory evolution conducted by Escarpment Laboratories (Canada). This robust Saccharomyces cerevisiae strain was “trained” through over 50 generations in high-gravity, heavily hopped wort to ensure maximum stress tolerance and reliability in challenging IPA environments. It is a haze-positive strain that enhances the permanent turbidity required for New England-style ales. Technically unique, it offers superior terpene-led bio-transformation—efficiently converting hop geraniol into citrusy citronellol. Unlike some hazy strains that can be sluggish, Pomona offers vigorous kinetics and high attenuation, resulting in a drier finish that prevents juicy beers from tasting cloying while maintaining a silky mouthfeel.
Key Benefits
- Juicy Aromatic Profile: Prominent, consistent notes of peach, mango, and citrus.
- High Biotransformation: Specialised enzymatic activity maximises hop aroma potential.
- Stress Tolerant: Optimised for high-gravity (>10% ABV) and high-hop-load fermentations.
- Stable Haze Formation: Designed to maintain the characteristic appearance of hazy and juicy styles.
- Efficient Kinetics: Rapid fermentation typically completed in 4–5 days.
- Robustly Re-pitchable: Lab-evolved genetics ensure stability over multiple generations.
Applications
- Brewing: The premier choice for New England IPA (NEIPA), Hazy IPA, Double IPA, and West Coast IPAs where a fruitier edge is desired. Also suitable for American Wheat, Blonde Ales, and hop-forward Session Ales.
- Cider Making: An excellent option for “hopped ciders” or tropical fruit-infused ciders where bio-transformation and a stone-fruit yeast character complement the fruit.
- Distilling: Useful for high-gravity specialty washes intended for fruit-forward whiskies where tropical ester carryover is a priority.
Typical Usage
- Pitch Rate: 50 – 100g per hL of wort (to achieve 2.5 – 5 million viable cells/mL).
- Temperature Strategy: Maintain between 18°C and 22°C. Fermenting at the higher end of the range will accentuate the tropical and stone fruit esters.
Technical Data & Properties
- Classification: Saccharomyces cerevisiae (Modern Hybrid).
- Attenuation: High (75% – 84%).
- Flocculation: Medium.
- Alcohol Tolerance: 10% ABV (Standard); can tolerate up to 15% in optimised conditions.
- Optimal Temp Range: 18°C – 22°C.
- STA1 (Diastaticus): Negative.
- POF Status: POF Negative (non-phenolic).
Storage and Handling
- Storage: Store in vacuum-sealed packaging in dry conditions below 4°C.
- Shelf Life: Guaranteed for 2–3 years from the date of manufacture if sealed.
- Handling: Once opened, the yeast loses activity rapidly. Reseal and use within 3 days. Dry pitching is the preferred method—sprinkle the yeast evenly onto the surface of the wort during the knockout process.
Summary
LalBrew Pomona™ is a game-changer for hop-forward brewing. By combining the aromatic complexity of a “wilder” strain with the technical reliability of a lab-evolved hybrid, it allows brewers to push the boundaries of flavor, haze, and bio-transformation without the risks of sluggish or unstable fermentations.
