High Voltage – Electrifyingly Clean Thermotolerant Dry Yeast

High Voltage represents a new frontier in sustainable brewing. This Saccharomyces cerevisiae strain is uniquely engineered to thrive at temperatures where traditional ale or lager yeasts would produce significant off-flavours. By operating comfortably between 31°C and 35°C, it offers rapid fermentation kinetics—often finishing in as little as 48 to 72 hours—allowing for unparalleled brewery efficiency and reduced refrigeration costs. Despite its high-speed performance, High Voltage remains remarkably clean with minimal ester production, allowing the nuanced characters of hops and malt to remain the focal point. While it is the “gold standard” for creating crisp pseudo-lagers in record time, its robust nature and high alcohol tolerance (17% ABV) make it equally effective for West Coast IPAs, clean Pale Ales, and even high-gravity Imperial Stouts. It flocs tightly, ensuring a bright, clear finished product.

Key Benefits

  • Exceptional Temperature Tolerance: Ferments cleanly up to 35°C, reducing the need for intensive wort cooling.
  • Ultra-Clean Profile: Delivers a neutral, lager-like finish with negligible ester or phenol production.
  • Rapid Turnaround: Significantly shortens fermentation cycles, often completing in 2–3 days.
  • High Alcohol Resilience: Robust performance in high-gravity brews up to 17% ABV.
  • Superior Flocculation: Settles quickly and firmly, facilitating easier harvesting and brighter beer.

Applications

  • Brewing: The ultimate tool for Pseudo-Lagers, West Coast IPAs, Kölsch-style ales, and Hard Seltzers. Also excellent for high-gravity Stouts and Porters where a clean background is required.
  • Cider Making: Useful for producing crisp, neutral ciders very quickly, especially in warmer production environments where temperature control is limited.
  • Distilling: An excellent choice for neutral grain spirits or vodka washes where high speed, high ABV tolerance, and low congener production are paramount.
  • Winemaking: Not typically recommended for traditional grape wines but suitable for high-alcohol fruit-based “wash” fermentations.

Typical Usage

  • Pitch Rate: 30–100g per hectolitre (hl) of wort.
  • Standard Application: For “super clean” results, ferment at 24°C–26°C. For maximum speed and efficiency (Pseudo-Lager), ferment at 31°C–35°C.
  • Nutrient Requirement: Due to rapid kinetics, a high nitrogen demand is noted; use of a high-quality complex nutrient is strongly recommended.
  • Instruction: Sprinkle directly onto the wort surface. Oxygenation is beneficial for high-gravity wort but often unnecessary for standard-strength beers.

Technical Data / Properties

  • Strain: Saccharomyces cerevisiae
  • Fermentation Temperature: 24°C – 35°C (Optimum: 31°C – 35°C)
  • Attenuation: 76% – 80%
  • Flocculation: High
  • ABV Tolerance: 17%
  • STA1 / Diastaticus: Negative
  • POF (Phenolic Off-Flavour): Negative
  • Ingredients: Yeast (98.8%–99.2%), Emulsifier E491.

Storage and Handling

  • Storage: Store in cool to ambient conditions (5°C to 15°C) in a dry, well-ventilated area.
  • Shelf Life: 3 years from the date of production if the vacuum seal remains intact.
  • Handling: Reseal the foil pack immediately after opening to exclude moisture. Store opened packs in a refrigerator (0°C to 10°C) and use as soon as possible.

Summary

High Voltage is the professional solution for modern breweries prioritising efficiency and sustainability. By combining the clean finish of a lager yeast with the heat tolerance of a Kveik, it allows for faster market delivery and significantly lower production costs without sacrificing the crisp, “electrifyingly clean” quality consumers demand.
