In order to restore the dried yeast to its fully active state, it is necessary to rehydrate the yeast as rapidly as possible by adding yeast to 10 x its mass of water (1g yeast: 1L wort) at a temp of 32-36 degrees Celcius. Stir for 10-15 min before adding the yeast to the backwash.
0.5-1g per litre of wort (500-1000ppm) is recommended.

The Highlands DADY (Dry Activated Distillers Yeasts) is used in the production of Malt Whiskey by fermentation of wort made from malted barley/distilling malt. It contains a selected strain of Saccharomyces cerevisiae distillers’ yeast in a highly concentrated and stable form.
