Crisp Torrefied Wheat
Crisp Torrefied Wheat consists of whole wheat kernels that have been subjected to high-temperature micronisation. This process pops the grain, gelatinising the starches and making them immediately available for enzymatic conversion in the mash. Unlike malted wheat, torrefied wheat retains more of the original grain proteins, making it an incredibly powerful tool for improving foam stability and lacing. It imparts a very light, bready aroma and a “clean” cereal sweetness. Because the kernels are expanded and brittle, they can often be added directly to the mash without milling, helping to maintain a porous grain bed and improving wort run-off.
