Crisp Cara Malt
Crisp Cara Malt is produced by “stewing” high-nitrogen green malt in a roasting drum. This process converts the starches into sugars within the kernel, which are then lightly crystallised. Because it is kilned to a lower colour than standard Crystal malts, it avoids heavy toffee or caramel notes, instead providing a clean, sweet, and malty profile reminiscent of honey and fresh grain. It is particularly valued for its ability to increase the final gravity and mouthfeel of a beer without significantly darkening the colour. Furthermore, its unique protein structure provides a significant boost to foam stability and lacing, making it an essential tool for brewers aiming for a “polished” look and feel in lighter beer styles.
Key Benefits
- Delicate Sweetness: Adds a subtle honey-like character without overpowering hop or yeast profiles.
- Superior Mouthfeel: Enhances the body and “fullness” of lower-gravity session beers.
- Foam Stability: Dramatically improves head retention and creates a dense, creamy foam.
- Vibrant Colour: Imparts a consistent, brilliant golden-yellow tint to the wort.
Applications
- Brewing: Widely used in Golden Ales, Blonde Ales, Helles Lagers, and West Coast or Hazy IPAs to balance hop bitterness.
- Distilling: Occasionally used in specialist malt whisky production where a light, sweet, and “honeyed” spirit precursor is desired.
- Winemaking: Can be used in “Malt Wines” to provide residual body and a golden colour to lighter fruit bases.
- Cider Making: An excellent addition to “Graff” to add a touch of sweetness and improve the visual appeal of the pour.
Typical Usage
- Rate: 5% to 15% of the total grist. At 5%, it adds body and foam stability; at 10–15%, it provides a more noticeable sweet malt backbone.
Technical Data
- Moisture: 4.5% max
- Extract (Dry Basis): 76.0% min
- Colour: 20.0 – 35.0 EBC
- Crystallisation: 90% min
Storage and Handling
Store in a cool, dry place (below 20°C). Keep bags tightly sealed to protect the glassy, hygroscopic kernels from moisture, which can lead to the malt becoming “slack.” Ensure the storage area is free from pests. Best used within 12 months.
Summary
A versatile light speciality malt that provides a gentle honey sweetness and exceptional foam stability while maintaining a bright, golden appearance.
