While technically an ale yeast, its unique ability to ferment efficiently at temperatures as low as 10°C allows brewers to create exceptionally clean, lager-style beers without the need for a dedicated lager strain. Nottingham is highly stress-tolerant, performing reliably in high-gravity brews (up to 14% ABV) and challenging fermentation environments.
