LalBrew Nottingham™ is one of the original heritage strains in the Lallemand collection, selected for its robust fermentation kinetics and neutral sensory footprint. It is a highly flocculent strain that settles quickly to produce brilliant, clear beers. While technically an ale yeast, its unique ability to ferment efficiently at temperatures as low as 10°C allows brewers to create exceptionally clean, lager-style beers without the need for a dedicated lager strain. Nottingham is highly stress-tolerant, performing reliably in high-gravity brews (up to 14% ABV) and challenging fermentation environments. With moderate expression of beta-glucosidase and beta-lyase enzymes, it also supports hop bio-transformation, making it a subtle but effective partner for modern hop-forward styles.

Typical Usage

  • Pitch Rate: 50 – 100g per hL of wort (achieving 2.5 – 5 million viable cells/mL).
  • Lager-Style Brewing: When fermenting at the lower end of the range (10°C – 12°C), use the higher end of the pitch rate scale.
