Swaen© Vienna is a high-quality specialty base malt kilned at slightly higher temperatures than standard pilsner malts to encourage more pronounced Maillard reactions. This results in a distinctive golden-to-orange colour and a sophisticated flavour profile characterised by notes of biscuit, bread crust, and subtle honey. While it provides a robust malt backbone, it retains sufficient enzymatic activity to be used as 100% of the grain bill. It is frequently used to “correct” overly pale malts, adding a satisfying mouthfeel and aromatic depth that elevates the complexity of both traditional European lagers and contemporary ales.
