Platinum Swaen© Chit Specialty Malt
Platinum Swaen© Chit is a “chit” malt, meaning the germination process is intentionally halted just as the rootlets (chits) begin to emerge. This results in a malt that is less modified than standard base malts, preserving a unique protein structure and a high concentration of beta-glucans. When added to the mash, these proteins provide a massive boost to the beer’s physical structure, creating a thick, creamy, and exceptionally long-lasting head. It also adds a subtle “green grain” or “fresh bread” aromatic note and increases the overall body and “chewiness” of the finished beer without significantly altering the colour or enzyme balance of the brew.
Key Benefits
- Provides a maximum boost to foam stability and head retention.
- Enhances mouthfeel and palate fullness in light-bodied beers.
- Imparts a delicate, fresh cereal and bready aroma.
- Helps to balance the highly modified nature of modern base malts.
- Contributes to a stable, natural haze if desired in specific styles (like Hazy IPAs).
Applications
- Brewing: Essential for Pilsners, Helles, Session IPAs, and Alcohol-Free beers where body and head are difficult to maintain.
- Distilling: Can be used in small amounts to provide a “grainy” depth to speciality spirits.
- Cider Making: Used in “Graff” to provide structural body and a persistent head that cider naturally lacks.
Typical Usage
- Usage Rate: Typically 5 – 10% for a noticeable improvement in head retention; can be used up to 15% for maximum body and foam performance.
