Einstein – German Lager Dry Yeast

Einstein represents the pinnacle of German brewing precision in a convenient dry format. Derived from the world-renowned Weihenstephan heritage, this Saccharomyces pastorianus strain is celebrated for its reliable performance and remarkably neutral fermentation profile. It allows the subtle nuances of noble hops and continental malts to take centre stage, producing beers with a professional, “polished” finish. During fermentation, Einstein exhibits low ester production and moderate, manageable sulfur development, both of which are essential for the traditional lager character. While it is the “gold standard” for Pilsners, Helles, and Märzen, its versatility and high alcohol tolerance of 12% ABV make it equally suitable for robust styles like Doppelbocks or clean Kölsch-style ales. Its low nitrogen demand and steady attenuation ensure a consistent, repeatable fermentation process, delivering the crisp, refreshing bite expected of high-quality European lagers.

Key Benefits

  • Heritage Performance: Based on the trusted Weihenstephan 34/70 strain for authentic results.
  • Ultra-Clean Profile: Delivers a neutral, crisp palate with minimal fruity esters.
  • Balanced Sulfur Production: Produces the ideal amount of sulfur for traditional lager “freshness.”
  • Excellent Versatility: Suitable for the entire spectrum of lager styles and clean ales.
  • Robust ABV Tolerance: Maintains performance in high-gravity brewing up to 12% ABV.

Applications

  • Brewing: The primary choice for German Pilsners, Munich Helles, Märzen, Bocks, Schwarzbiers, and Vienna Lagers. Also effective for clean-fermented Kölsch or Cream Ales.
  • Cider Making: Can be used to produce very clean, “vinous” ciders at lower temperatures, preserving delicate apple aromatics without yeast-derived esters.
  • Distilling: Suitable for grain-based spirits where a very clean wash is required to allow raw material characteristics to shine through post-distillation.
  • Winemaking: Generally not used in traditional grape winemaking, but useful for neutral fruit-base fermentations.

Typical Usage

  • Pitch Rate: 100–150g per hectolitre (hl) of wort.
  • Standard Gravity (1.045): 100g/hl is recommended for most applications.
  • High Gravity (>1.060) / Very Cold Starts: Increase pitch rate to 150g/hl or higher to ensure a healthy start.
  • Instruction: Sprinkle directly onto the wort surface or re-hydrate in sterile water. For best results, pitch at or slightly above the starting fermentation temperature.
