Crisp – Hana Heritage Floor Malt
Hailing from the Haná valley in Czech Moravia, this heritage variety is the genetic progenitor of nearly all modern lager barleys. Crisp has meticulously revived this strain, growing it in the prime malting lands of Norfolk to bring a piece of brewing history to the modern brewhouse. Haná Heritage Malt provides a clean, smooth, and sweet wort with a signature bready complexity that modern high-yield varieties often lack. It is exceptionally pale, allowing brewers to achieve the lightest possible straw-gold hue. While suitable for single-step infusion, its traditional continental character excels with step temperature mashing or decoction, which helps solubilise proteins to produce the brilliant clarity and magnificent, dense head characteristic of world-class lagers.
Key Benefits
- Historical Authenticity: The original “Pilsner” barley, offering a profile identical to the very first golden lagers.
- Exceptional Paleness: Enables the production of ultra-light, brilliant blonde beers.
- Superior Foam: High protein quality supports fantastic head retention and lacing.
- Complex Breadiness: Imparts notes of dough and fresh bread without heavy caramel or cereal sweetness.
Applications
- Brewing: The definitive base for Bohemian/Czech Pilsners, German Helles, and Festbiers.
- Distilling: Can be used in specialist “Heritage” grain spirits or vodka bases where a clean, bready profile is desired.
- Cider Making: A premium addition to “Graff” to add a delicate, malty structure without darkening the cider’s natural straw-yellow colour.
Typical Usage
