Crisp Lager Malt (Europils)
Crisp Lager Malt is expertly crafted using English two-row spring barley, kilned at lower temperatures to preserve a pale straw colour and a delicate, sweet cereal aroma. While continental lager malts often require complex step-mashing, Crisp has optimised this malt for versatility; it performs excellently in both traditional UK single-temperature infusion mashes and continental rising-temperature programmes. It contains a slightly higher protein content than standard ale malts, which aids in creating a stable, creamy head and provides essential nutrients for vigorous lager yeast fermentations. The result is a highly fermentable wort that finishes dry and refreshing, allowing the hop character and clean fermentation esters to remain the primary focus of the beer.
Key Benefits
- High Fermentability: Ensures a dry, crisp finish with excellent attenuation.
- Superior Modification: Optimised for efficient mashing and reliable extract yield in all brewhouse setups.
- Foam Stability: Higher protein levels support excellent head retention and lacing.
- Neutral Canvas: Provides a clean, “non-malty” sweetness that showcases hop aromatics and yeast purity.
Applications
- Brewing: The primary base malt for all Lager styles, Pilsners, Helles, and light-coloured Ales like Kölsch and Cream Ale.
- Distilling: Used for clean grain spirit production where a neutral, high-extract base is required.
- Cider Making: An excellent choice for “Graff” (malt-cider hybrids) where the goal is to add fermentable sugars and body without significantly darkening the cider.
Typical Usage
- Rate: 80% to 100% of the total grist. It can be used as the sole base grain or blended with speciality malts to add complexity.
Technical Data
- Moisture: 4.5% max
- Extract (Dry Basis): 80.6% min
- Colour: 2.8 – 4.1 EBC
- Total Nitrogen: 1.40% – 1.75%
- Soluble Nitrogen Ratio (SNR): 36 – 46%
Storage and Handling
Store in a cool, dry area (below 20°C) and away from direct sunlight. To maintain the crispness of the grain and prevent moisture pickup, ensure bags are kept tightly sealed and stored off the floor. Keep the storage environment free from pests and strong odours. Best used within 12 months.
Summary
A versatile, high-extract base malt that provides a clean, neutral foundation and excellent head stability for a wide range of pale lagers and refreshing light ales.
